Most teleost cannot synthesize vitamin C (L-ascorbic acid, AA) due to the lack of L-gulonolactone oxidase which is the key enzyme for AA synthesis. Thus, an exogenous source of AA is required in fish diets. AA is also known to improve immunity of fisheven though its exact mechanism has not been demonstrated. Citrus rind contains useful substances, such as carotenoids and flavonoids. The citrus byproduct (CBP) can be utilized for the efficient production of many phytochemicals.
