2, 6-Deoxyfructosazine (1) was synthesized from glucose and ammonium formate and isolated from the reaction mixture by membrane technology. The compound was characterized by HRMS, ~1HNMR, and ~(13)CNMR. Thermal analysis of the product showed that it began to decompose at 220 °C, and its weight loss was about 50 % at 320 °C. GC/MS analysis of the tobacco smoke showed that it decomposed to produce 2-methylpyrazine, 2,6-dimethylpyrazine and 2-ethyl-6-methylpyrazine in the smoke upon smoking.
