The state of Pará is a potential producer of the fruit cupua?u (Theobroma grandiflorum Schum), due to the seasonality of its production, it becomes important to study alternative conservation, using metal packaging for the convenience of transportation, aiming the development of marketing Previous studies showed the importance of applying new techniques that can elucidate the behavior of coatings used in metal packaging for the products with special characteristics such as the Amazon. A few years ago was sold in the city of Belem, Pa, pulp cupua?u metal packaging in tin plate coated. After some time, it was found that the product was withdrawn, suggesting that the high acidity of the fruit cupua?u could be interacting with the metallic substrate of tinplate by coating used. The research undertaken aimed at the feasibility of packaging the pulp cupua?u pasteurized in metal packaging in tin plate lined with acrylic type organic film. Analyses were evaluated for times of 0 (top), 1,15,60,90,120,180,240,270 and 300 days of storage. The results of the analysis of pH, microbiological and sensory properties was observed that the applied thermal process is feasible for the preparation of the pulp pasteurized in metal packaging, since they were retained features of the sensory and health product the product was well accepted. The technique of electrochemical impedance spectroscopy associated with the analysis of scanning electron microscopy and analysis of metal contents in samples cupua?u, was effective in evaluating the proposed finish.
