Aside from drinking, rice may be the most important exposure route for arsenic (As), a non-threshold 1 class carcinogen (Stone, 2008). Rice is the staff of life for 3 billion people. The world rice consumption has raisen from 156 million in 1960 to 423 million metric tons in 2007 (USDA, 2008). The nature of paddy rice taking up As readily from waterlogged soils, where As is liberated by anaerobic microbial activity (Islam, 2004), may lead to As accumulation at least of 10 fold higher concentrations than wheat and other cereals (Stone, 2008). Elevated As accumulation in rice may be additionally due to growing rice in marginal land contaminated with As due to global food crisis.
