Cultivation of grains is a significant industry of the national economy in Latvia. The industry provides grain processors and producers of bread with the amount of wheat grain and flour required. In Latvia wheat occupies almost a third of the sowing area. Therefore the aim of the current research was evaluating the agro technical and meteorological conditions influencing the grain and flour quality according to customer (processor) requirements. Protein content, Zeleny index, quality of gluten and falling number was determined in the grain harvest for the period from 2001-2004. Gluten content and quality, Falling number and water absorption was determined for wheat flour of the same period. The results indicated that certain correlations exist between the various quality indicators, as well as the properties of varieties and meteorological conditions during grain maturation. Meteorological conditions influenced falling number both in wheat grain and flour, and agro technical conditions (use of nitrogen fertilizer during vegetation period) influenced the protein content in grain. Although, it was found that the positive correlation between the content of protein in grain and amount and quality of gluten in flour does not exist.
