The increase in the viability of young sturgeons, both those migrating downstream and being stocked, is conditioned, first of all, by the gain in their weight and size and the improvement of their physiological state. Reactions of the young sturgeon Acipenser gueldenstaedtii and the stellate sturgeon Acipenser stellatus to extreme conditions (higher temperature, salinity and starvation) depend, to a large extent, on the level of lipids, particularly the phospholipids, and n-3 and n-6 fatty acids in the fish body. The balance of the n-3 and n-6 fatty acids in foods is especially important for the efficient growth and development of young sturgeons. The most valuable lipids are those, whose ratio between the summarized n-3/n-6 acids exceeds 1.5 (Abrosimova et al.).
