Nowadays the changes of our life style due the decrease of physical work have determined an increase of the average life span. The availability of foods containing an increased level of probiotics and prebiotics agents can play a key role in maintenance of good health. Among the probiotic microrganisms, Lactobacilli and Bifidobacteria are showing proven benefits in prevention and treatment of acute diarrhoea and gastroenteritis. A synergic effect has been demonstrated among strains from different species as well as probiotics and prebiotics. The aim of this work was evaluate the availaibility of bioactive peptides in yogurt made with different ingredients. Bioactive peprides were determined in 12 percent TCA soluble nitrogen fraction of yogurt made with the traditional adjunct of S. thermophilus and L. bulgaricus and in the yogurt made with additional strains of Bifidobacteria and L. acidophilus and inuline as prebioric component. A careful liquid chromatography electrospray ionisation mass spectrometry (LC-ESI-MS) of 12 percent TCA soluble peprides had shown in probiotic yogurt a higher number of soluble peprides at a lower size with i) an opioid activity (beta-casomorphin), and ii) a putative mineral carrier function (phosphopeptides).
