Vacuum Cooling - The Science and Practice

摘要

The first post-harvest step in cooling many fruits and vegetables is the vacuum cooling process. This paper describes the history, thermodynamic theory and system equipment used in the process. Ammonia refrigeration systems are used in conjunction with the vacuum equipment and their application and operating characteristics are also described.
