Fragmentation Patterns of Monomeric and Oligomeric Wine Stilbenoids by UHPLC-ESI-QTOF

摘要

23 previously unreported stilbenoid compounds were found in red wine for the first time. Some compounds were positively identified through the use of authentic standards while others were tentatively identified through fragmentation patterns and comparison with literature spectra from other plant sources. In the future, NMR structure elucidation, quantification of these compounds as well as biological assays should be performed.
