Aspartame is a sweetener with very few calories and widely used in drink and food industry. However, Lots of salty effluent containing aspartame after crystallization was produced, which resulted in the loss of the product aspartame. Desalination with electrodialysis from the aspartame effluent was proposed and studied in this paper. The influence of voltage and flow rate on operation time, energy consumption and current efficiency was investigated. The experimental results showed that the operation time decreased with the increase of voltage but the energy consumption increased. With the increase of flow rate, the operation time and the energy consumption decreased but the organic material loss increased. Under the condition of 12 V, 20L/h, the optimal operating parameters are the operation time of 65 minutes, the current efficiency 0.699 and the energy consumption 0.786kWh/kg. About 98% electrolyte was removed from the aspartame effluent, which showed that the electrodialysis was effective for removing salts from aspartame effluent. Therefore, the aspartame in the effluent could be recovered by desalting the effluent with electrodialysis.
