In the last decade, a great deal of progress as been made in understanding the molecular and physiological basis of sweet taste. heterodimeric G protein-coupled receptor, 1R2/T1R3, appears to bind to and be ac-vated by most (but not all) sweet tastants.1 4 he component subunit T1R3 was originally ned based on its association with Sac, a 4nurine locus that determines sensitivity and eference for sugars and synthetic sweeten-S.5,6 Structure–function studies on the sweet Este receptor expressed in cell culture revealed at each of the two subunits has binding sites different sweeteners and plays a role in sig-ling to downstream partners.
