Seafood consumption in the United States increased slightly the last couple of years after remaining constant through most of the 90's. In 2004, the most recent year for which data are available, annual consumption stood at 16.6 pounds per capita, according to the National Marine Fisheries Service. This was a record high. Much of the growth comes from aquaculture imports, which have been declining in price.
