The use of both enzyme-catalyzed processes and benign environmental media are key areas for future innovation in Green Chemistry. The technological purposes for which enzymes can be used have greatly increased in scope, and they have been used under anhydrous conditions in organic solvents, mainly for asymmetric synthetic transformations, due to the growing demand for enantiopure pharmaceuticals. In the same context, the use of supercritical fluids and ionic liquids as reaction media has become an important strategy for developing clean manufacturing processes and environmentally friendly technologies of industrial interest.
