The production of brown rice in the world is about 560 million tons a year. Usually brown rice is polished before eating, and the 10% of its weight is discharged as rice bran. In Japan, one million tons of rice bran is discharged, and an about 35% of rice bran is used to produce rice edible oil which is extracted with hexane. The defatted rice bran (DRB) is partly used as feed, while is mostly discarded even though it still contains many useful components such as saccharides, proteins, and phenolic compounds. We have developed an efficient method for extraction useful components from DRB by subcritical water treatment. It has been clarified that the subcritical water extracts obtained from DRB possesses antioxidative property or emulsifying prorerty. In this time, we have investigated the extraction from DRB by the use of subcritical alcohol.
