Rapid Assay of Multi-Class Antimicrobials Residues in Food of Animal Origin by Paper Spray Mass Spectrometry

Monitoring of Antibiotics is important for preventing antibiotic misuse in animal husbandry and providing healthy diets. The development of paper spray provides a time-efficient analysis of a wide variety of chemicals in complex mixtures without sample preparation. In this work, paper spray mass spectrometry was applied to identify and quantify nine antimicrobial residues of different classes from four types of general food matrices, including beef, chicken meat, milk and egg.
