The unsaturation distribution among the fatty acids between the tissues was noteworthy. Brain mitochondria contained 24percent monounsaturated fatty acids, compared to kidney and liver at 14percent and 12percent respectively. Almost the opposite was found ofr polyunsaturated fatty acids. kidney and liver had 22percent and 27percent, whereas brain only contained 16percent PUFA. The increased incorporation of MUFAs in brain mitochondria may be a safeguard against oxidation. However the presence of longer-chain PUFAs, would be counter-active to this protection. Preliminary results from heart mitochondria show a fatty acid profile similar to that of kidney and liver samples.
