Coriander (Coriandrum sativum L.) is an herb commonly used in Brazil in a variety of food preparations,. The coriander seeds are used as spice to flavor foods; some studies have confirmed its antioxidant activity. The objective of this study was been to obtain information on the antioxidant activity of extracts from coriander leaves Therefore, the global yields isotherms for the system coriander leaves/CC>2 were determined The global yields isotherms at temperatures of 298, 308 and 318 K were determined for pressures of 100, 150, 200, 250, and 300 bar. The extracts were analyzed by thin layer chromatography and gas chromatography,. The content of phenolic compounds was determined. The highest yield (2.3%. dry basis - d.b.) was obtained at 150 bar and 318 K Accordingly to the literature, this yield is larger than the yields obtained for SFE from coriander seeds. The differences in the chemical composition of the SFE extracts obtained in the present study and reported composition of coriander seed oil may explain the highest yield The present results offer the possibility of using the coriander leaves extract as source of natural antioxidant compounds.
