Jasminum sambac Linn is cultivated in several parts of India. The experimental study on extraction of floral fragrances by different conventional methods and compared with subcritical CO{sub}2 extraction methods. The essential oil obtained from bud plucked at early morning and entire day is studied. The composition of decanted oil and cohobated oil is quite different; the cohobated oil is contained improved percentage of oxygenated terpenoids. The redistillation of distilled water for recovery of cohobated oil is undergoes various chemical changes such as degradation, hydrolysis etc. Besides the chemical changes some of the components also partly or completely lost in distilled water. Headspace analysis of live and plucked flowers are studied by HS-SPME over PDMS fiber. The live flower contains more amounts (E,E)-α-farnesene, along with the chief components like indole and methyl anthranilate etc. The extraction of flowers with pentane and chilled in methanol can separate most of the hydrocarbons but still the absolute contains considerable amounts of fatty acids/esters. The fractionation of concrete with liquid CO{sub}2 is superior in comparison to methanol-chilled method, but the liquid CO{sub}2 fractions are not free from waxy components. The direct extraction of flowers in liquid CO{sub}2 is suitable for extraction and analysis of volatiles in laboratory scale.
