Solution-state ~1H nuclear magnetic resonance (NMR) spectroscopy is an effective tool in the compositional analysis of alginates, which are binary copolymers of (1-4) linked β-D-mannuronic acid (M) and α-L-guluronic acid (G) extracted from brown seaweeds. The M/G ratio, which can be determined by NMR, varies according to season, age of population, species and geographic location and is closely related to the application of the alginates as thickeners, stabilisers and gelling agents in the food and pharmaceutical industries.
