摘要

This work presents the results of the experiments and numerical simulations made during the refrigeration chicken meat process. For the experiments were used: a special equipped tunnel in a laboratory and an experimental setup in a slaughterhouse. For the numerical simulation of heat transfer were used: ANSYS and Bertem programs.
