The Maillard-derived chromophore 3-hydroxy-4-[(E)-(2-furyl)methylidene]methyl-3-cyclopen-tene-l,2-dione (1) was found to potently inhibit the growth of human tumor cells in vitro. Ingrowth inhibitory concentrations, 1 shuts down the activity of the mitogen-activated protein kinase cascade, measured as inhibition of the Elk-1 phosphorylation. At concentrations > 30 (mu)M, the chromophore significantly reduced the integrity of the microtubule skeleton.
