The influence of high hydrostatic pressure on the adduct formation of patulin with cysteine was investigated using different pressure/temperature combinations. The reaction was found to be promoted by pressure. The activation energies were calculated for 0.1, 400 and 500 MPa and the activation volumes at 4, 25 and 40°C were determined.
