Traditionally nutritionists have focused on stoichiometrically balancing rations to match nutrient absorption with the animal's metabolic requirements. However, some absorbed nutrients are bioactive and have the ability to modify physiological and metabolic processes. Nutritional modification of physiological processes has the potential to inexpensively increase animal production and profitability, however nutrient-physiology interactions are complex. Recent advances in molecular biology provide powerful tools to investigate bioactive nutrients and provide insight into their regulation of physiological processes. This paper discusses the paradigm of nutritional regulation of gene expression and presents recent discoveries of gene regulation during diet-induced milk fat depression (MFD).
