The activities of antioxidants have been examined in a wide range of foodstuffs and food related model systems. It has been clearly demonstrated that the effectiveness of an antioxidant can vary markedly when comparing different lipid containing systems. In addition to the structural properties of the compound itself, the composition and the colloidal properties of the complex system can largely influence the activity of an antioxidant.
