Clinical studies have shown that different dairy products affect the serum cholesterol concentration in a different way. Unfermented milk is demonstrated to be hypocholesterolemic both in human and animals. Some scientists have indicated that skimmed milk and butter milk reduce the cholesterol level, whereas other have not seen this effect. Unlike milk products with a low fat level, butter is proven to increase the cholesterol level. Difference in serum cholesterol level is suspected to be due to the physical properties of milk fats. It is possible that the physical properties have an influence on the absorption kinetics and thereby on the fat elimination from blood.
