One successful component of our food safety program in the state of North Carolina is advanced food safety training for county family and consumer science extension educators. Extension agents were selected and brought to campus for a three-week intensive, graduate level course covering a wide breadth and depth of food safety information. In addition, the course required the completion of small group projects and individual professional development projects on food safety topics. Resource materials developed as a result of agent projects were showcased at the annual extension staff conference. A poster session detailed all of the individual projects and group projects (food safety for daycare, food service and home food preservation). The response by other county agents was overwhelming and requests for these materials are constantly being received. Due to a large demand from other county food safety educators to participate, the program has been continued for a second time with eleven additional agents.
