In this paper, a multivariable process model is established which is related to industrial sugar or sucrose crystallization process. This process is an intricate, nonlinear, critical and slow time-varying process in sugar industry. This paper proposes a mathematical multivariable process model by evaluating process transfer functions between multiple inputs and multiple outputs of the sugar boiling process in a vacuum pan. Each transfer function analyzed separately and model established for combined effect. Complete process is analyzed and simulates in MATLAB where curve fitting method is applied to analyze the time domain behavior of all the process variables.
