In order to achieve rapid nondestructive determination of phosphate content in cod surimi, near-infrared quantitative model was established by fitting the near-infrared diffuse reflectance spectral data of cod surimi with its phosphate content. Prediction and correlation coefficients of the calibration and validation were used to evaluate the quality of the model. The model was further developed by partial least square (PLS). The result showed that correlation coefficient of calibration in the model of cod surimi was 0.968, and prediction of calibration was 0.045. The correlation coefficients of the validation was 0.966. The prediction of validation was 0.048. This study demonstrated that NIR spectroscopy could be used to quickly determine the content of phosphate in cod surimi to a certain extent.
