In order to obtain the preparation technology of water-soluble dietary fiber, malus asiatica was used as raw materials by enzymatic and chemical methods in this paper. Optimum conditions for extracting the water-soluble dietary fiber in the raw materials were confirmed through orthogonal tests. The results showed that optimum condition of the malus prunifolia was as follow: 0.5% glucoamylase with reaction temperature of 60°C, hydrolysis time 60min, pH 12 alkali with hydrolysis temperature of 70°C and hydrolysis time of 90min.
机译:为了获得水溶性膳食纤维的制备工艺,本文以酶法和化学法为原料,以大果菊为原料。通过正交试验确定了提取原料中水溶性膳食纤维的最佳条件。结果表明:紫花海棠的最佳条件为:0.5%的葡糖淀粉酶,反应温度为60°C,水解时间为60min,pH为12的碱,水解温度为70°C,水解时间为90min。
