Designing the Quality Assurance System of Fruits Vegetables ColdChain

There are many quality risks we need to take and control in the fruits & vegetables cold chain. The basic measurement is constructing a quality assurance system for the cold chain. In first part of this paper, we analyze how to control the quality risks in each stage of fruits & vegetables cold chain. Then, we try to construct the quality risk control system of fruits & vegetables cold chain based on HACCP. Finally, two choice criterions of additional cooling are put forward to help manager to choose one kind of additional cooling measurement.Post-harvest fruits & vegetables are still living things and constantly metabolize. The main metabolism is respiration (Chen et al, 2007, Deng, 2007, Liu 2009). The quality risk of fruits & vegetables cold chain means the uncertainty that the fruits & vegetables decompose and cause losses. Though cold chain logistics can protect the qualities of goods better than normal logistics, there are many potential risk factors which may affect the qualities of goods in every stage of the cold chain. In order to ensure the quality and safety of cold chain, control of all quality risks of cold chain are totally needed. The stages of cold chain include growing area, post-harvest pre-cooling, transporting by refrigerated trucks, refrigerators in wholesale center, freezers of retailers, and fridges of customers.
