Rice, pretreated by 60Coγ-irradiation, was dried by hot air in low temperature.Experiments were conduced to study the influence of different 60Coγ-irradiation dosages, airtemperatures, initial moisture contents of rice on the dehydration rate and the surface temperature ofsamples. A conclusion is arrived that the three factors affect the dehydration rate and surfacetemperature of rice, and, the larger the dosage, the greater the rate of dehydration of rice. Theexperimental results also showed that the larger the dosage of irradiation, the higher the surfacetemperature of rice at the same dehydration rate. Contrarily, at the same moisture content, the higherthe dosage, the lower the surface temperature of rice.
