The flavour stability of beer is of great importance to the brewing industry. The only universally accepted method of monitoring the changes in beer flavour over time is sensory analysis. To develop more comprehensive and accurate terminology for the description of beer staling, free choice profiling of a range of beer styles over a period of time has been used to draw up a proposal for a Beer Flavour Stability Wheel. This tool will allow the international brewing community to “speak the same language” on the subject of flavour stability, ultimately promoting progress in this very important field.
