Non starchy cell wall polysaccharides are the main constituents of the starchy endosperm cell walls of barley grains. These substances are known to be implicated in wort filtration problems. This work is aimed at studying the role of arabinoxylans in wort viscosity. A method, based on HPSEC, has been developed for measuring viscosity due to arabinoxylans in barley, malt and wort. This work shows that these polysaccharides play a role in malt and wort viscosity. Therefore, in the future, it might be interesting to evaluate the arabinoxylan content as a barley brewing quality criteria.
