The experiments with solid state fermentation of Monascus ruber for the production of Monacolin K were carried out. It was found that the content of Monacolin K and moisture content of substrate increased with time, whereas the ratio of weight loss to substrate reached the maximum at 8th day. The resutls suggested that the better fermentation period for the production of Monacolin K should be about 12 days. The thickness of substrate below 4.5 cm and initial moisture content of 46
