Natural as well as modified phospholipids are applied for the manufacture of food or for the production of cosmetics as emulsifying agents. The emulsifying properties can be influenced by the hydrolysis of phospholipids in C-2 position. This reaction by which the corresponding lyso-compounds are formed is catalyzed by the enzyme phospholipase A_2. In this paper we describe a new method for the determination of the reaction rate that is based on conductivity measurements and might be useful for the application in the field of quality control, e.g. in the food processing industry. Further, results of experiments, dealing with the immobilization of phospholipase A_2 by covalent and adsorptive binding to organic and anorganic carrier materials will be discussed. Finally it is reported about the influence of different organic solvents on the kinetics of phospholipase A_2.
