The enzymatic hydrolysis of rice bran protein was studied with degree of hydrolysis. Trypsin was found to be the most effective protease and its optimum conditions were pH8, ratio of enzyme to substrate 1:100 and temperature of 37℃ Resulting hydrolysates were tested for their opioid antagonist activities based on guinea pig ileum-contracting assay, the hydroly-sate produced at 11.9% of degree of hydrolysis showed the highest opioid antagonist activity. High performance size exclusion chromatography results indicated that its molecular weight distribution ranged from 200 to 600.
