Magnetic Resonance Imaging: Potential Use for Grain Research

Magnetic resonance imaging (MRI) originally developed for medical diagnostics, is increasing in popularity as an alternative to conventional imaging techniques to acquire high quality in vivo images of grains. Its non-destructive and non-invasive nature can be best used to capture two- or three-dimensional pictorial information of the microscopic and macroscopic changes that occur in grains during different biological processes. The basics of magnetic resonance imaging and its applications for grain research are described in this paper. A thorough review of published literature reveals that MR images can be quantified to yield valuable information for process optimization and grain quality monitoring. Also, MR images can provide fundamental understanding of the moisture transfer phenomena in grains.
