NMR studies of water mobility in foods

摘要

NMR is capable of providing detailed information on water mobility in foods over distances ranging from the molecular to the macroscopic.In this chapter we illustrate the power of the technique by considering examples from the drying and freezing behavior of cellular tissue,starch,and gelatine.
