Method for its production includes milling a protein ingredient and mixing it with water, where the protein ingredient is leguminous plants, separation of fibrous substance from protein, application of ultrasonic treatment to protein base in ultrasonic device, this base is filtered through one or more membrane filters to obtain a concentrated protein base to protein concentration of at least 15 wt. % of protein.;EFFECT: invention enables to extract undesirable coloring compounds from the protein base, reduce the content of simple compounds which impart an undesirable flavor and taste to the protein base or food products, and/or improve texture, implement environmentally safe technology, facilitate inactivation of dangerous enzymes, in particular, lipoxygenases, obtaining products with high content of food fibers, improved extractability and solubility of protein.;14 cl, 6 dwg, 2 tbl, 1 ex
