The present invention relates to slaughtered pig part (2) processing plant (1) including a plurality of pig part (2) processing stations and a conveyor (10) supporting via respective couplings (30) a plurality of spaced apart clamp structures (20), said conveyor (10) advancing said couplings (30) with a respective clamp structure (20) in a machine direction (T) from a first station (40) for introducing a pig part (2) between jaws of a clamp structure (20), towards a last station (600) for removing the bone of the processed pig part (2) from the clamp structure (20), characterised in said clamp structures (20) each comprising a carrier part (21) carrying two jaws (25), each jaw (25) having an edge (27) oriented towards the edge (27) of the other jaw (25), said edges (27) defining between them a gap (G1), said jaws (25) having a first face (29) and an opposite second face (29'), at least one of said jaws (25) being mounted to turn relative to said carrier part (21) about an axis (A) from a first position to second positions where said gap (G1) is opened up, wherein a force applied against said first face (29) turns said jaw(s) (25) from said first position, a biasing force, preferably provided by a respective spring (28), biasing said jaw(s) (25) towards said first position at least when said clamp structures (20) move away from said first station (40).
