Process and plant for particulate matter (S) along a conveyor system (T) of products (P), said plant having a collection system (2) which sucks a carrier gas flow (Fl) and demarcates, in use, a suction chamber (10), namely a closed volume, with said product (P) which advances in an advancing direction (V1) on an advancing plane (XY); the separation plant having a separation system (3) which is connected to said collection system (2) and gets, in use, said carrier gas flow (Fl) and particulate matter (S); wherein said separation system (3) separates particulate matter (S) from the carrier gas flow (Fl).
