PROBLEM TO BE SOLVED: To provide chou shell dough and flour mix for chou shell capable of producing the chou shell having appropriate expanded volume and a crispy texture.;SOLUTION: Chou shell dough and a flour mix of this invention includes 20-80 mass% of durum flour and 80-20 mass% of low-gluten flour in the total raw material grain flours, in which the durum flour contains less than 5 mass% of particles whose particle size is 200 μm or more and contains 10-15% of damaged starch.
