The purpose of the present invention is to provide a material which can impart excellent foaming properties, foam stability, and finely textured foam. This heat-treated product is obtained by heat treating, under high-temperature acidic conditions, a soybean raw material in which the crude protein content, the carbohydrate content, and the lipid content has been adjusted. The heat-treated product is characterized in that: a specified fraction is present at a proportion that is equal to or more than a given quantity, said specified fraction having a weight-average molecular weight of 3000-15000 when the molecular weight distribution thereof is measured by gel filtration HPLC at a wavelength of 220 nm; and the rate of change in the foam size is no more than 10% when the rate of change in the foam size is measured by a dynamic foam analyzer. It was discovered that said heat-treated product imparts excellent foaming properties, foam stability, and finely textured foam to a beverage, etc.
