The present invention discloses a new method of packing and preserving fruits in liquids (fruit juice, syrup, water, etc.). The method includes a fruit packaging step, in which the fruit is filled into a specially formed plastic container, topped with liquid, injected with an inert gas to enforce can integrity, seamed to the end of the metal can, and is viable. It is heat treated to remove microorganisms. The process is specific in that, by adjusting heat treatment parameters and manipulating seam specifications, replacing metal cans with flexible and sustainable plastic cans is a viable alternative.
