The present disclosure provides food compositions for humans comprising a Methylococcus capsulatus protein isolate or whole cell product, wherein the Methylococcus capsulatus protein isolate or whole cell product is composed of at least 70% crude protein; has a protein digestibility corrected amino acid score (PDCAAS) of at least 0.9; and has a δ¹³C of about -70%o to about -30‰. Methylococcus capsulatus protein isolates or whole cell products provided herein are useful for the manufacture of meat substitutes as well as other food compositions, such as protein bars, nutritional beverages, protein supplement powders, frozen non-dairy desserts, and baked goods.
