It describes a device and a process for heat treatment, in particular of foodstuffs, taking the following steps in succession:(a) the supply of process goods to be treated, in particular foodstuffs;(b) provide the process pressure pP intended for the process goods to be treated for the process goods;(c) provide a processing room for the inputs of the processed goods to be treated and for the deployment of the processed goods;(d) the provision of devices to introduce gases into the process room;(e) the provision of process air dispensers;(f) provide a sensor for indirect measurement of process pressure pP;(g) rules of process pressure pP specified by step (b) and measured by step (f) using the devices provided in steps (c), (d) and (e);(h) bringing the processed goods to be treated into the processing room;(i) continuous implementation of step (g) throughout the duration of the heat treatment of the process goods;(j) removal of processed goods from the processing area.The advantages of the invention are that the process pressure represents the conditions in the process space, requires little effort to measure and the energy and product optimization of the heat treatment process can be carried out with a simple robust measurement technique.
