To provide a vegetables and fruits storage device and a vegetables and fruits storage method, capable of retaining freshness of vegetables and fruits for a long term, in storing the vegetables and fruits under a low-temperature environment in accordance with the CA method.SOLUTION: A storage device 1 is configured to adjust oxygen concentration and carbon dioxide concentration in a refrigerator, to store vegetables and fruits. The storage device includes: humidity adjustment means 100 of adjusting humidity of air in the refrigerator, temperature adjustment means of adjusting a temperature of the air in the refrigerator, gas concentration adjustment means 300 of adjusting the oxygen concentration and carbon dioxide concentration of the air in the refrigerator, and control means 400 of controlling the whole operation of the storage device. The humidity adjustment means includes: gas-liquid contact means 120 of gas-liquid contacting the air in the refrigerator and humidity adjustment liquid containing aliphatic polyhydric alcohol; concentration adjustment means 140 of adjusting concentration of the humidity adjustment liquid brought into gas-liquid contact with the air in the refrigerator in the gas-liquid contact means, wherein the concentration adjustment means adjusts the concentration of the humidity adjustment liquid, thereby adjusting the humidity of the air in the refrigerator.SELECTED DRAWING: Figure 1
