PROBLEM TO BE SOLVED: To provide an extraction device and an extraction method for easily extracting a solid component from a raw material by using a phase change of a substance. An extraction device 1 is a device that extracts carotenoids from citrus fruits using a phase change of DME. The extraction device 1 is a heat exchanger that heats a treatment tank 5 that dissolves carotenoids with liquefied DME and a liquefied DME that dissolves carotenoids with latent heat of condensation generated during the liquefaction of DMEs to vaporize the DMEs and increase the concentration of carotenoids. 3. It is provided with a discharge pipe 15 that communicates with the bottom of the heat exchanger 3 to discharge the carotenoid and the DME, a vaporizer 6 that vaporizes the liquefied DME, and a separator 7 that separates the vaporized DME and the carotenoid.
