Brewing; yeast.-In brewing and other fermentation processes, the wort, during the extraction, boiling, cooling, and fermentation, and also the yeast, during storage, are preserved from contamination by the atmosphere by supplying purified ozonized air, prepared as described in Specification No. 4548, A.D. 1903, [Abridgment Class Non- metallic elements], to the closed vessels containing the wort &c. or to closed chambers containing the vessels.
