8195. Kleinhenz, V. April 13. Coffee preparations; coffee substitutes.-In the preparation of mixtures of coffee, malt coffee, &c. with milk and sugar in solid form, the milk or sugar is treated to cause it to act as a binding- agent. Sugar solution, which has been concentrated at least to the "blowing-test" and rubbed with a spatula &c., is mixed either with concentrated milk or dried milk dissolved in milk, and with coffee &c., or with dried milk dissolved in coffee extract, or with dried milk and coffee or coffee extract ; or milk, or a solution of dried milk in milk, is concentrated until it responds to the " balling-test," and is then mixed with coffee extract and hot ground sugar.
